Dog friendly Pancakes

Our friends over at Lily’s Kitchen recently shared a dog friendly pancake recipe so we thought we’d give it a try [It is Shrove Tuesday after all]

Ingredients

[This made 8 pancakes for us]

For the pancakes:

200 g (7 oz) buckwheat flour

500 ml (17 fl oz) milk 2 eggs, beaten

1 tsp vegetable oil

For the filling:

100 g (4 oz) cottage cheese

100 g (4 oz) spinach leaves, shredded

Instructions

1) Measure out the flour into a bowl, make a well in the centre and pour in the milk and beaten eggs. Whisk together, then place the bowl into the fridge for 20 minutes.

2) Heat the vegetable oil in a frying pan, then pour enough batter into the pan to coat the bottom. Cook for about 30 seconds, then flip the pancake over and cook for a further minute or so.

3) Put the cottage cheese in the centre of the pancake and add the spinach leaves. Roll up the pancake while it’s in the pan so the filling heats up. Cut into pieces to serve.
